Enchiladas Verdes

I made these in honor of Mexican Independence day. Wahoo! Seriously now...these are the best enchiladas I've ever had in my life. Light, crisy, and delicious. The recipe is from Cook's Illustrated July-August 2008 and is much too long to post but email me and I'll pdf you the recipe. The homemade sauce is what really whoops on this recipe...charred tomatillos and poblanos...yummy!
